Corn, Bean and Grain Salad
1 1/2 Cups Black Beans
1 1/2 Cups Brown Rice, or another grain of your choice. The salad in the picture above was made with millet. Brown rice is my favorite in this salad, but since I love brown rice and tend to use it a lot in other dishes, I try to use other grain to mix things up.
3/4 Cups Corn
1/2 Red Bell Pepper, Diced
1 Tomatoes, Diced
2 Green Onions, sliced
2 Tbsp. Cup Fresh Cilantro, Chopped
1-2 Avocados, diced
Dressing
1 1/2 Tbsp. Lime Juice
1 1/2 Tbsp. Organic, Raw Apple Cider Vinegar
6 Tbsp. Organic, Extra Virgin Olive Oil
1 Clove Garlic, Minced
3/4 tsp. Salt
1/8 tsp. Garlic Powder
1/4 tsp. Chili Powder
1/2 tsp. Cumin
Pinch Cayenne Pepper
1. Place all salad ingredients in a bowl, except for the avocado.
2. Mix dressing ingredients together.
3. Pour dressing over the salad and mix well.
4. Add avocado just before serving.
TIPS
The leftovers are great as a wrap filling topped with ranch style dressing, or on top of a bed of greens.
