Sam's Strawberry Poppy Seed Dressing
Here's another salad dressing my daughter requested I create. She tried a store-bought creamy strawberry poppy seed dressing that she liked. I tasted it and it seemed simple enough. This recipe is a healthy version that I concocted. I think salad dressing is a good opportunity to get in a healthy fat. The bonus for this dressing is it's probiotic. Of course, you don't eat a lot of it at one time, but anything good going in your mouth is a win.
Sam's Strawberry Poppy Seed Dressing
1 Tbsp. organic, lemon juice or organic, raw apple cider vinegar
3 Tbsp. organic, pure maple
1/8 tsp. healthy salt
1 cup strawberries roughly chopped
1/4-1/2 tsp. poppy seeds
1/3 cup thick kefir or raw yogurt
In a small blender or food processor, puree lemon juice, maple syrup, salt and strawberries.
Stir strawberry puree and poppy seeds into kefir or yogurt.
Store in fridge.
Notes
If you would like a thicker dressing, use kefir cheese, or yogurt cheese in place of kefir or yogurt.
