Jambalaya
My family LOVES Jambalaya and this recipe does not disappoint. You can adjust it depending on your desired heat level, from very mild to spicy. Depending on where you live, quality andouille sausage may be hard to find. Never fear, there are several companies that offer organic, andouille sausage online.
Jambalaya
28 oz. organic tomatoes, diced
1 bell pepper, diced
1 small onion, diced
1 cup celery, diced
1 lb. organic andouille sausage, sliced
1 1/2 cup unsalted broth, or water
2 tsp. oregano, dried leaves
2 tsp. thyme, dried leaves
1-3 tsp. Real Taste Elevate Cajun Seasoning, depending on desired heat level
1 lb. wild caught shrimp, uncooked and de-shelled
1 cup cooked chicken, diced
2 1/2 cups cooked brown rice
Salt to taste, if needed
1. Place first nine ingredients in a slow cooker.
2. Cook on low for about 8 hours.
3. Add rice, chicken and de-shelled shrimp.
4. Cook just until shrimp starts to turn pink.
TIPS
Add an additional 1/2 cup chicken in place of shrimp, if desired.
