Easy, Short-Cut Bulgogi Beef

We love bulgogi and this quick version is a total win when you need a fast and flavorful lunch or dinner. I often braise a beef roast. I then divide up the meat and broth to use in meals throughout the week. This bulgogi seasoned meat is always a hit, whether it's in a lettuce wrap, a grain bowl, or mixed into a green salad. Because we generally eat meat with a whole grain and plenty of vegetables, we don't need a lot to fill us up. I divide one cup in four to five portions, and serve along with a whole grain, such as brown rice and toppings. This not only provides a more economical way to eat meat, it's also a more sustainable way. Anything that is good for the environment is good for you! Even better, it offers the opportunity for more fiber and nutrition with the accompanying whole grain and vegetables.

I highly recommend the red cabbage slaw as an accompaniment. If you plan to serve it as a salad, grain bowl or lettuce wrap, I suggest making additional slaw dressing, or bulgogi seasoning to drizzle over the top. Unless of course, you're like my daughter who likes things dry and on the plain side.
