Mixed Vegetables
1/2 head broccoli, separated into very small floretes
1/2 red bell pepper, cut into chunks
1/2 yellow bell pepper, cut into chunks
1/2 orange bell pepper, cut into chunks
1/2 large red onion, sliced in thick slices or chunks
8 oz. fresh mushrooms, sliced in thick slices or chunks
2-3 zucchini, sliced into thick slices
2 Tbsp. organic, extra virgin olive oil
2 Tbsp. RealTaste Hope seasoning, or seasoning of choice
1. Heat oven to 350.
2. Place vegetables in a 9x13 pan and toss with fat and seasoning.
2. Cook for 15 minutes.
NOTES
These are not roasted vegetables, but rather lightly cooked vegetables. They should be al dente.
Make a batch or two of this recipe to use in meals throughout the week. They're perfect to use in grain bowls, on a salad, or to make a quick soup.
