Simple Southwestern Skillet Dinner

Serves 5

  • 3 cups cooked brown rice, or grain of choice

  • 14.5 oz. organic diced tomatoes

  • 1 1/2 cups cooked black beans

  • 1 cup organic, frozen corn

  • 4 tsp. RealTaste Vida seasoning

  • Juice of 1 lime

  • Cilantro

  • Avocado

1. Add rice, tomatoes, black beans, corn and seasoning to a large skillet.

2. Heat to boiling, reduce heat and simmer 5 minutes.

3. Remove from heat. Mix in lime juice and top with cilantro and diced avocado.

NOTES

If you have your grain and beans prepped ahead of time, this comes together in just a few minutes. I recommend spending about an hour each week to prep food. This makes it possible for healthy meals to come together quickly and easily.

If it seems dry, add 1/2 cup broth or water.

We like to top it with a fried or poached egg with a runny yolk.
